Actually, I'm really proud of this dish. I literaly dreamed it up, somehow I got the idea, hey, they put pesto in noodles, why not rice? And this is what I came up with. It's really neat to look at, the green rice shows up very nicely here. Basically, I make a normal sushi roll and mix pesto into the rice. I then tempura the entire roll to give it some crisp and cut it into diagonals to show off the nice green rice inside. I served this with a spicy dynamite sauce and a wasabi mayonaise (japanese mayonaise of course). The pesto I make for this is actually a red pepper pesto for some spicy flavor to it, if you want to eat it plain. Most people like to eat it with the sauces though. My inital fear was that the pesto might be too overpowering, however, since I don't add the vinegar and sugar as I would with normal sushi rice, the flavor was just right.
