This is a Chicken Saltimbocca. It's chicken breast pounded flat with procuitto, baby swiss, roma tomatoes (and for ironchef shrimp). Grilled. I put it in a basil cream sauce, however i've recently tried it with a pesto cream sauce that i devised. It's really quite tasty, with the salty ham to give the chicken some extra flavor. A simple dish that is often a big favorite.
