As I mentioned before, in my pursuit of learning more about deserts, I decided to bring some petit fours into work. I chose a cake type petit four because I wanted to work on glazing etc. The only problem was that the glaze I used didn't go as far as I thought, so much for the what I read up on how to glaze these things. I ended up doing it a different way which caused cake crumbles to fall into my glaze and made the mint glze (the green glaze) speckeled with chocolate cake towards the end of the glazing of those cakes. The almond (pink ones) didn't look as bad. I'll have to study a bit more on this an work on the technique. It was kind of fun making and working with marzipan, I'll have to work on sculpting little fruits and animals out of the stuff. I'd also like a chance to make a few different kinds of petit fours.
