Koo Koo is another Persian dish that I learned about with Shanaz. The best way to describe it is to say it's a frittata with a lot more greens/ingrediants than egg (where as a frittata is mostly egg with a few ingrediants sprinkled in). It's a very fragrant dish because it comprises mostly of cilantro and parsley. The texture is kind of spongy and though it is not traditionally served with a sauce of any sort, I think it might go well with some sort of dipping or side sauce.
