I was bored one evening and decided to go down to the store. Lo and behold it was strawberry season! Of course you can't go through strawberry season without doing some chocolate covered strawberrries. I practiced with the fancy dipping techniques. I used a silpat to hold them and deliver them, but I'd like to know how people like lambs and stuff cool their strawberries so that they don't have that "flat bit" on the bottom. I have to say I'm pretty partial to the tuxedo design, I saw that in some magazine and had to give it a go.It should be noted this was the start of my deserts and presentations kick (see tart and petit fours), I usually hate deserts but I figure to round myself out a bit more I should practice.
