Baba Ganouj is a traditional Middle Eastern dish. As with all Middle Eastern dishes every region has either their own variation with the same name or a different name with the same ingrediants. Here I opted for a version with some parsley chopped into it. Typically you dip into the baba ganouj with toasted pita bread, but it can be pretty good as part of a wrap or sandwich.
